2008 Christmas Dish

A friend make these sushi a few years back. I have always wanted to try making,but held back due to thinking that i need to purchase a packet of japanese rice. Ended up this year, my friend made again. learnt the trick of using our usual rice.

prep 30 serve 10-15


cutting ingredients into strips,

4 eggs
1 avocado
1/2 cucumber
1/2 japanese pickle
1 unagi (grilled eel)
8 sticks of crab meat
approximate 20-30 prawns
ebiko roes (flying fish roes)
japanese mayonese
1 packet of seaweed

anything you wish to add..


mixed ebiko roes
japanese pickle
cucumber*avocado sliced into strips


placed seaweed on top of plastic wrapped
layout rice thinly using wet butter knife,(standby a bowl of clean water)
(spread it like butter on bread)
spread ebiko mixed


laying out the ingredients
roll from top/bottom, press & push in the ingredients as you roll.


sealed all ingredients twist both ends for furthur security


sliced the rolls if sushi approximate 2cm apart..



voila!

Christmas~ Vietnamese rice paper roll







Make this vietnamese with jezz,
replace some ingredients, she decided to add fresh crab meat.
we go w/o the glass noodles,almoz replace with thick vermicilli.

sauce taste choking due to d'vinegar while boiling.
i will source for another recipe for sweeter sauce.




Prep 25mins,cook 10mins



12 medium prawns boiled 20 mins set aside(shell&devien)
(u may use crab meat/some mushrooms)
100g glass noodles
1 1/2cup finely shredded iceberg lettuce
1 small carrot cut into thin strips
12 sprigs of fresh mint
12 sprigs of fresh coriander
12x22 round rice paper (available @cold storage)
1/4 bunch of fresh garlic chives,cut into 12cm lengths

To assemble rolls, place 1sheet of rice paper in a bowl of warm water until soft.
Lift the sheet from water carefully place on board covered with a clean towel.
Fold the rice paper down by 4 cm to create a flat edge.

you may slice the roll into half.

sweet chilli dipping sauce

2fresh red chillies, sliced thinly
3 cloves of garlic,quatered
1/2 cup of white vinegar
1/2cup lightly packed grated palm suger/brown sugar
1/2 tsp salt
1tsp fish sauce
2tsp lime juice

something with cheese..

a colleague shared her cheese tart recipe..
decided to try it out after reading for many times..



mixing cream cheese,sugar,egg..
bake @ 180 degree c for 20mins..

Crust mix: ground macademia nuts,butter,flour
vanilla extract


verdict: too sweet for both cheese & crust, crust too hard..
over estimate d'amt of sugar + teperature not long engh baking.
1st round of crust over baked.

hmmm,will look for another cheese cake recipe.

Happy Anniversary!

3 years anniversary,
this time i attempted making western food (beef)..
decided not to wait for my Le creuset cookware..
try to cook his favourite steak..way to go..

marinade with red wine, garlic & a little worchester sauce,

Always like colours on my plate..
dress it with his fav.zesty italian..
i prefer balsamic vinegar mix :)



Side dishes: runny 3/4done egg, baked potatoes
& baked beans..



verdict: hmm..medium well became medium rare..
worried i over cooked it,picked it up too early,
otherwise pull it thru :)

guess better read up more steak/beef recipe & invest my Le Creuset cookware..
will attempt braise recipe next time..

Experience Genting Highlands & food

Favourite frog legs


based on my observation when mum-in-law cooked this dish.

I cooked this dish 3 times so far.
Now that I can get hold of cleaned skined frogs in supermarket,
makes it easier to perfect this dish.

Same ingredients can be used for cooking chicken bits,if frog is a bizzare food for you.

1-2 Slice onions
2 -3 dried chillies
garlics

1 tbsps sesame oil/oil,
1tbsps Soy sauce,
1tbsps Dark sauce,
a pinch of salt.

stir fry a little longer,to make sure the frog are fully cooked.
Our all-time favourite!

Apple&Pear Crumble

Step 1: Peel,core both apple & pear, then slice thinly. (Slice apple in water to prevent from browning)
Step 2: Drain apple & combine with pear slice in mixing bowl. Sprinkle brown sugar & cinnamon sugar over fruits; toss well. Divide them into 4 ramekins /1 large baking dish. Set aside.

Step 3: Preheat oven at 200Deg.cel. Mix flour&baking powder,oats,caster sugar&butter.

Step 4: Cut butter into small pieces, use your fingersto pick some flour,butter to rub the mixtures until they resemble rough breadcrumbs.

Step 6: Top fruits mix with crumble mix. Bake in oven for 20-25mins or until the top turns golden brown, Garnish with slice cherries & serve warm.

Prep 30mins, Cooks 25mins, Serves 4

1 medium-sized apple,

1 medium-sized pear

2 tbsps brown sugar

1 tsps cinnamon sugar

250g plain flour, sifted with 2 tsps baking powder

6tbsps instant oats

220g caster sugar

200g cold butter (my Food&Nutrition colleague suggested pastry magarine would be a better choice)
Garnishing any thinly slice fresh fruits :)

Decided to cook something soupy, not feeling very well after more than 12hrs of work for the past 3-4days with the musical.
Crave for my childhood's spongy egg noodles mum used to make.

Tried to create the textures but did not go too well (required cutting into strips). Veges broth was good.we ate w/o the egg noodles.

I decided to add the japan brown mushrooms for their sweet smell & taste.

**note: if cant gauge the amount of salt to add, you may wish to replace it with
Ikan billis cube/chicken stock cubes.

Sweet comfort



Very exhausting week,
Been so busy in school & the musical.

After simple fast food @hm,
decided to try making crepe.
Using pancake mix to make,
i replace water with low fat milk..a healthier choice
Milk gives out an aroma with the pancake mix.
Avocado is a great fruit,but i never be able to catch the right time to cut it.
Add tomatoes and crab meat to replace that savoury sweet cream sauce,
i've yet to figure out how to make..
Overall,taste turned out well.
Sweet&juicy.
Hubby ate all the remaining plain pancakes i store for my breakfast..

Red Wined Poached Pears

A recipe from woman weekly by my sis-in-law..
She can whiped very yummy dessert & bakes well.

I attempt a smaller portion for this recipe.
Mainly becoz i crave for red wine..

4-8 medium peckhan pears / pears which are available.
400ml red wine
50g sugar
100ml water
1 chinamon stick
2 star anise & Berries to garnish

Place all ingredients into pots&bring to boil.
Simmer till pears'r soft abt 20-30mins depend size of pears.

Remove&allow cooling,
transfer pears together with red wine into another bowl
Chill in fridge.

I sift the boiled ingredients and mix the liquid & pears with red wine..
Chill overnite..

Feeling Mexican


Taco shells came with some seasoning mix/sauce,
Usually i do my own mix (tomato puree,salsa sauce,lotsa tomatos & mixed herbs).
Stir fry chopped garlic&onions, minced beef.
Add all seasoning in once the meat is cooked..Pretty fuss-free.

Today i tried mixing the 3/4 of the provided seasoning mix with my mix..
Turned out pretty delicious.
I found out ground cumming powder does the trick+chilli powder..
I was quite sting on the mozzarella cheese today..
Coz my Hubby too fat, I must watched his diet.

Tom Yam Veges






same ingredients as Tom Yam Sea Bass.
replace meat or fish with veges for healthier choice..

if you are lucky,
You will find sets of Tom Yam ingredients already packed nicely
for ready cooking.

Comfort Food




been eating mum's & mum-in-law's Dumplings..
so cook simple porridge for easy digestion.

dried scallop and shredded carrots to substitude salt
& add abit sweetness to the porridge.
ran out of Bovril (reminds me of childhood/baby food)
& mum-in-law's self-made Kim Chi.

To go: Bovril / Preserved veges and dried bacons...

Steamed Tom Yam Sea Bass Soup




1 sea bass,
2 stalks of parsley stems
(abt 4inches),
6 whole sm bird's eye chillies,
3 slices galangal,
1 stalk lemongrass, finely julienne,
4 pcs kaffir lime leaves

some chinese parsley & shredded red chillies
(for garnishing)

Soup base: 2 tom yam cubes
Seasoning: 1/4 cup lemon juice
1 tsp sugar & pinch of salt

+ - depend on inidividual taste.

tips: recipe cards/booklet can be obtain at counters
in supermarkets. FREE!

Living



Grilled chicken with simple garnish.
side dish salad in separate bowl.

marinate with some spices, soy sauce & herbs.
Placed in oven..
voila!

Been experimenting with food..
been making tiramisu.
j like it.
