Pizzas

Sudden craving for Brotzeitflade Vegetarisch..
decided to try making one..but ended up making pizza instead. :p
short of time to make my fav.thin crust bought ready pizza base.



Ingredients:
2 large Pizza base ~ 1 Hawaiian
1/4 cup (1 can) tomatoes sauce / 1 small can thick tomato paste
250g mozarella cheese
2 bratswurt sausages sliced
3 slices of pepper ham

Beef cheesy pizza
300g of minced beef (pepper, cajun seasoning)
2 onions sliced
1/2 yellow pepper sliced
2 tomatoes
3-4 sliced of pineapples diced

Oven bake~325-375 F


Spread tomato paste on both pizza base
(thick pizza paste preferred)



Spread mozarrella cheese on top of paste


Lay ham, sausages and pineapple on top one another
Finish final layer with mozzarella cheese again.

Repeat steps for Beef Cheesy pizza
1. Spread tomato paste
2. Spread mozzarella cheese

3. Minced beef (seasoned with cajun and pepper seasoning)
4. Placed fresh tomato slices on top of minced beef
5. Add sliced yellow pepper and mushroom
6. Finish topping with mozzarella cheese

Aglio Olio

Always curious how this dish was done, simple ingredients never taste so good :)
it taste v.good with seafood especially prawn..
decided to try..doing it..
decided to keep it simple with a side dish (Back Bacon wrapped asparagus)



Ingredients:
350 grams of Spaghetti (thick spaghetti or vermicelli is better)

200 g White button or swiss button mushrooms
10 tablespoons of olive oil
3 garlic cloves peeled and chopped finely
Added colour, you may try red/yellow pepper
Tomato
hot little pepper (if desired)
fresh parsely
salt

1. Brown the garlic, stir fry mushroom and/hot pepper in olive oil, add salt.

2. Cook the spaghetti in hot salted water, drain them and add them to the oil and garlic mixture
Added fresh tomato for colour
saute'3 add the minced parsely, chilli flakes/ chilli paddy (optional) and serve hot!

side dish: Back bacon wrapped asparagus
Sprinkle aparagus with a pinch of ground pepper,
wrapped bacon around 3-4 stalks of asparagus,
Pan fried/oven grilled.

Avocado juice

Jezz shared with me my favourite avocado juice from the newspaper.
Coz i get occasional craving from Ayam Penyet's avocado juice..

Ingredients:
2 Avocados (you may placed em with banana to speed up the riping process)
50 ml gula melaka syrup
250 -300ml fresh milk


blend avocados with milk in a blender
add gula melaka to taste.

My fast lasagna recipe

Ransacking my cupboard, realised ive a box of lasagna's noodles.
its time to try makng it.
Due lack of ingredients, i use whatever i can get hold of in my fridge.
600gm of minced beef
2 tablespoon of sun-dried tomatoes paste
5-6 fresh tomatoes (boiled to remove skin,puree)
or 1 can of tomato puree from store
2 onions finely chopped
3-4 cloved of garlics finely chopped
mozzarella cheese
cheddar cheese / parmesan cheese
1 teaspoon of salt
fresh basil or mixed herbs
ground pepper
2-3 tablespoon salsa sauce (optional)
As i prefer fresh ingredient i tried to use everything fresh,
if not ready-made herbs from the store is fine (bottled)
Heat oil and fry garlic and onions

Add in some fresh tomatoes if you like
Add in minced beef, tomato puree, salsa sauce, basils, salt and pepper.
Soak lasagna noodles for around 10-15mins.
Start laying your layers your noodles with your seasoned meat sauce & cheese.
Top with cheese to end the layers..
Remem.2 cover the entire noodles with meat suace and keep the content moist.
Cover with foil and bake.
Oven bake 35-45mins 180 Degree Cel.

Apologise w/o end product, too busy eating. :p

Banana walnut 'cupcakes'

Tried another version of Betty Crocker's premix,
i added fresh banana (diced) into the mix.

less dense than expected,
maybe banana puree may make the mix richer.

Cornflakes cookies

Been searching for this recipe for many years,
my malay friends make the best cornflakes cookies..
At last, stumble across this recipe behind a cornflakes packaging..

A) 5 tablespoons honey
1 tablespoon caster sugar
100 gm butter
1 teaspoon of vanilla essence

4 cups cornflakes


Mix A on low heat.


Mix into 4 cups of cornflakes.
I mix some chopped macademia nuts.
you may try mixing with chopped raisins, cherries / nuts.


Spooned into small paper cups.

preheat oven 170 degree celcius,
Bake for 14-20mins.
Take out from oven leave to cool for 20mins.

Super moist chocolate cake

To curb instant craving, i'll stand by some premix.
Betty Crocker's cakes-muffins premix available at major stores
& small groceries stores..

You may make richer by adding nutella choco/heyshey choco chips/
macademia nuts, etc.




Mix in water, 3 eggs and vegetable oil.
after 15-20 mins
Frosting or cream to finish.

Decided to explore out of town for food, quite surprise to stumble across
this v.cheap,good and quality..well,at least affordable buffet.
You can order unlimited amount of sashimi, barbecue version or cooked.

Cream cheese bun

Digging some ingredients and finally of good use.Hestitate this recipe for quite sometime because it take a bit of time to proof. With my big mixer,it helps cut short preparation.

Dough: Bread Flour 440gm
Caster Sugar 70gm
Dried Yeast 6gm
Water 250 ml
Salt 1/2 tsp
Butter unsalted 30gm
Almond slice (topping optional) 100gm




Blend @ low speed bread flour, sugar & yeast for 2mins
Gradually add in water until well mixed
Add in butter & beat @ low until well-mixed ~1mins
Add salt & beat @high speed for 5-8mins
(done dough is stretchable & wont stick to hand)
Proof for 30-40mins until double-side(Cover with cling wrap)

Divide into 6 of 140g each & roll into a ball,rest for 10-15mins covered in wrap
Flatten dough & fill the center with cheese cream to form a ball
Put in fridge for 15mins
Use scissors & cut into flower shapes, 6-8 cuts
Proof for 40mins covered in wrap
Optional: Brush to with egg & sprinkle almond slice all over
Omit egg for vegetarian
Bake for 15mins @ 200 degree cel
Cool down & sieve some icing sugar on top

i'll attempt this again as the cream cheese ooze out while i was folding the dough,
cover the whole entire dough with it..
Can taste the cheese but it suppose to be cheese filling in the middle :p

























Organised mess..

Once you fell in love with food, likely you'll spent a great deal of time in kitchen.
I usually spent around an average of 2hrs in kitchen everyday.
If cooking, around 3hrs.Preparing,clearing, cleaning & serving.
Cleanliness and dust free environment is a must,coz im allergy to dust.
I will fix up IKEA organisers by myself and categorise all my stuff from art materials,shoes - hubby's IT stuff. (hmm,you may wonder where my husb fit into chores)
Loved to chuck away stuff hidden or set aside a space for them,so i know where to look for them. Now im into baking & had invested a v.expensive mixer..
allocated a drawer for my food processor and baking materials.
tea cabinet,alcohol cabinet,dried food&all ingredients+planting my very own herbs garden :)

Simply love Nigella's storage room of ingredients & sauces.
I do not have big spaces but im v.contented.
Of coz never envy 4-5rms habitat, coz CLEANING kills!
For those who dont cook, they've at least one place to spared cleaning / no oils stains to worry about..can be lazy for days. (not to mentioned toilets/bathroom)
I keep everything minimal & out of sight.



Im not a fantastic cleaner/100%housewife, will continue to try my best.
i admit some stains and dust can be a real nuisance..we've got to be creative at home.
So cleaning them every 2-3days,a little scrubbing is necessary.
Of coz if you can afford a partime cleaner/ maid may help alot :p i mean ALOT..

Breadies mood

Was in JB for the weekend,
stumble across this blackish bread..
Its known as bamboo charcoal bread.
Taste: mild sweet, very soft.


RM 3.50/3pcs, around 2cm thick each pc.



Bought along scones, my favourite. RM1.50 for 2pcs.
The cake shop had a wide range of breads & cakes,
i think the cake shop can be found here in S'pore.

japanese curry

Cooking had been pretty dummy proof,
depend on what's you & your loved ones preferences
i was pretty curious how this japanese curry works..

ingredients:
lean beef/chicken/lambs/shrimps/practically anything you like
i use pime spare ribs(what i have in my freezer at d'moment)
1 carrot,
1 onion,
4 potatoes (used 4 becoz it goes well with the curry)
(celery, bell pepper / any other vegetables

cut the above ingredients into cubes.


Fried the potatoes till golden brown


i browned my prime ribs before stir-fry

Stir fry meat & onions in oils/butter until onions are lightly browned, approx 3mins
Add in the vegetables.

Add water snf bring to boil.
Reduce heat, cover & simmer until meat is tender,approx.15mins
Remove from heat, break golden curry sauce mix into pieces and add them into the pot
stir until completely completely melted.
Simmer 5mins,stir constantly



Serve hot over rice/noodle
husb.wish its more saucy,
i added less water, its different from the usual chicken curry i attempt.
Guess it should be really saucy as shown in the pics....hmmmm.

Fried Udon

Its been ard 2yrs i last ate fried udon..
So decided to give it a shot.




Ingredients:
400g of Udon
4 cloves of garlics
1 onions diced
1 stalk of spring onions cut
1 pkt of golden needle mushroom
1 pkt Shimeiji brown mushroom
1/2 carrots thinly cut
1 egg
1/2 tbsp of oyster sauce
1/2 tbsp of soy sauce
2 tbsp of chicken stock
1 tsp of pepper granule
1 can of roast stew pork / chicken thinly sliced
broccoli optional


Method:
1. Cook udon in boiling water. Drain.
2. Marinate the chicken pieces in the oyster sauce, chinese wine, corn flour, sesame oil and white pepper. (if possible for an hour)
3. Heat some vegetable/canola oil in your wok.
4. Once the oil is hot, add the onions and carrots.
5. Once the onions are going transparent, add the garlic, saute till the garlic is fragrant (ensure you do not allow the garlic to brown)
6. Add the eggs, and toss till it is cooked (not wet)
7. Add the chicken pieces/ the stewed pork (optional) and stir till the chicken is is slightly browned.
8. Add the Udon, and mix well.
9. Add in spring onion and the mushrooms, sauces and mix well.
10.Add the chicken stock, mix well and cover for 2 minutes.
11. Mix for another 5 minutes, till the vegetables are cooked.
12. Serve hot.

coffee marble cheesecake

Base
1 slice 8'' sponge cake

CREAM CHEESE MIXTURE A:
350g fresh milk
50g condensed milk
250g cream cheese
50g plain flour sieved
5 egg yolks

B: 5 egg whites
80g caster sugar

C (own)Mixed: 2 tbsp coffee
1 tbsp kahlua, 2 tsp sugar
i add some alcohol taste to the coffee mixed.

METHOD
Preheat oven 180Degree C.Line a 8'' round baking tin with grease proof paper & put in a sliced of sponge cake.
Double- boil fresh milk, condensed milk & cream cheese until cream cheese has melted completely. Add plain flour, stir & cook until mixture has thickened.
Remove & leave to cool. Add egg yolks and stir well.
Whisk egg whites & caster sugar at high speed until soft peak is formed. SLowly mix into cream cheese mixture.

Strain the mixture onto the sponge cake.

Pour C on top of white cream cheese mixure.
swirl through for marble effect.

Steam-bake cheesecake in the preheated oven at 180 Degree C for 20minutes. Reduce the heat to 140 Degree C & bake for another 1 hour & 45 minutes or until cooked.
Leave cake to cool on oven with door ajar for 1 hour.
Chill in the fridge for 4 hours

Mango Cheesecake

Base
150g digestive biscuits, crushed
100g melted butter
50g toasted cashewnuts,chopped

Creamed Cheese Mixture
A: 500g cream cheese
60g caster sugar
3 tbsp fresh mango puree
1 tbsp lemon juice
250g mango flesh, diced

B: 200g non-dairy whipping cream, whipped
1 1/2 tbsp gelatine pwder,
mixed with 4 tbsp water & double-boiled until dissolved

Top Layer
1 tsp gelatine powder, mixed with 100ml water, double-boiled until dissolved
2 tbsp fresh mango puree


Method
1. BASE: Combine all the ingredients & press into 9'' round spring foam baking tin. Chill in the fridge 20 mins / until the base is firmed.

2. CREAM CHEESE MIXTURE: Use a mixer to beat cream cheese, caster sugar, mango puree until smooth. Add in Mango flesh and stir well.

3. Mix in whipped fresh cream in 3 or 4 batches. Lastly add in gelatine mixtures & stir well. Pour mixture onto the prepared base.

4. Chill in the fridge for 3 hours.

5.TOP LAYER: Mix mango puree with dissolved gelatine. Pour onto the set cheesecake & return to the fridge to chill overnight. Cut & serve.

Setting

After 3hours of chilling

bicuits base cant be thicker.
I replace digestive biscuits to wheat biscuit,coz store outa stock.
+ i crushed too many biscuits for the amount of butter i suppose to use. :P
