Tiramisu

Combine 2 different recipes to enhance the tiramisu. :)
Swop d'strawberries to peaches.


Ingredients (serves 8) make two rounds for 16 mini tubs

2 cups strong black coffee
1/2 cup marsala i use Kahlua
3eggs, separated with white (i used 4 eggs to 500g of mascarpone cheese)
1/3 cup caster sugar = 40 grams
250g mascarpone
300ml thickened cream, lightly whipped
4pcs of peaches sliced (canned peaches)
1 pkt sponge fingers. (depend on the size of the container used)



Method:
1. Sliced peaches & placed them in a glass / ceramic bowl.
a. 4 tbsp of Cointreau (orange liquer) & some sugar / 2tbsps of syrup (Syrup in canned peaches)
b. Mix well and refrigerate for three hours.




2. Prepare coffee bath and pour in Marsala (replaced orange juice if preferred)/ 1/2 cup Kahlua into a shallow dish.
a. Dunk each fingers into coffee bath, Do not soak fingers too long,it'll become soggy..
b. Placed them nicely into your container(s)



3. Beat egg yolks & sugar in a large bowl with electric beaters until pale & thick.
a. Add the mascarpone & whipped cream, mixing gently until just combined.



4. Beat eggwhites in a medium bowl with electic beater until soft peaks form.


a. Pour eggwhites peak into mixture


b. Using a large metal spoon, gently fold eggwhites into the mascarpone mixture.


Cover the soaked fingers with one-third of the mascarpone mixtures.
Repeat layers 2 times, ending with the cream. Cover with plastic wrap & refrigerate for at least 2 hours.
Dust generously with cocoa & serve. :D

Hong Kong Style

j brought me to this Hong Kong style cafeteria at Marina Square,
I tried their Papaya soup pork chop mee (i had the vermicelli replaced to mee sua)
its just right for a late dinner :)


v.delicious & sweet.

Simple comfort food.

Always find myself buying stuff which left rotting at home,
Oversize fridge without filling it up..Still learning what can be put in fridge for a long time..

I dont order cold dish outside any more, due to irritable bowel syndrome..
I find cold dish require a bit of skill to handle it clean + i make sure i stayed away mayo egg (never forget my food poisoning experience)

Poor hubby will not geta eat mayo egg..Glad hes not choosy with what i made instead.

Potato salad

1. Finely diced onions ('minced' with food processor)

2. Diced Potatoes (Boiled, add a pinch of salt)

3. Pan fried bacon (Removed fatty parts,for healthy reason)

4. Bacon bits (optional)

Mix the above (cooked) with mayonese & Serve.

Hoon's fuss free pot

Visited a friend over a weekend to chill out,
decided to stay in rather than going out for dinner.
She whipped up a fuss free pot of 'everything' she can find in her small fridge..
i cooked similar fuss free pot before(using canned roast pork),but Hoon's less sinful.


I tried her recipe and i can take a short nap..
v.good for lazy ger like me/after a tough work..
Posted My Japanese Homemade Don in march,quite similar but this is less work.



Ingredients:
1. 2-3 pieces Taiwanese sausages or 1-2 preserved sausages (laup cheong) (Sliced)
2. 2 pieces Fresh corns (remove from stalk)
3. 2 cups of rice (depend number of people eating &cup size) (Washed & filled up with water enough to cooked the rice)
4. 2 pieces of Boneless Chicken thigh (cut)

Placed all the above ingredients into rice pot.
2 to 2 1/2 tablespoon of Oyster Sauce (you may wana test taste)
1-2 teaspoons of black soya Sauce
Sprinkle some pepper into rice pot
MIX WELL & Set your rice cooker to cook them all.

Fuss Free way to cook your rice with ingredients :-)

Sharkfin melon soup

Was browsing through supermarket,
came across a beautiful melon (light green with polka-dots liked marks)
Its known as sharkfin melon due to the texture of the flesh.
v.simple soup with minimal seasoning,
the mushroom & chicken will helped sweetened the soup :p

Ingredients:
White japanese button mushroom
Sharkfin melon flesh (seeded)
1/2 chicken
Bring to boil for around 45-60mins.
i usually boiled soup for an hour or more,
to soften the meat and bring out the taste.

1 teaspoon salt to approx.1 litres of water
(required tasting to estimate)
