2008 Christmas Dish

A friend make these sushi a few years back. I have always wanted to try making,but held back due to thinking that i need to purchase a packet of japanese rice. Ended up this year, my friend made again. learnt the trick of using our usual rice.

prep 30 serve 10-15


cutting ingredients into strips,

4 eggs
1 avocado
1/2 cucumber
1/2 japanese pickle
1 unagi (grilled eel)
8 sticks of crab meat
approximate 20-30 prawns
ebiko roes (flying fish roes)
japanese mayonese
1 packet of seaweed

anything you wish to add..


mixed ebiko roes
japanese pickle
cucumber*avocado sliced into strips


placed seaweed on top of plastic wrapped
layout rice thinly using wet butter knife,(standby a bowl of clean water)
(spread it like butter on bread)
spread ebiko mixed


laying out the ingredients
roll from top/bottom, press & push in the ingredients as you roll.


sealed all ingredients twist both ends for furthur security


sliced the rolls if sushi approximate 2cm apart..



voila!

Christmas~ Vietnamese rice paper roll







Make this vietnamese with jezz,
replace some ingredients, she decided to add fresh crab meat.
we go w/o the glass noodles,almoz replace with thick vermicilli.

sauce taste choking due to d'vinegar while boiling.
i will source for another recipe for sweeter sauce.




Prep 25mins,cook 10mins



12 medium prawns boiled 20 mins set aside(shell&devien)
(u may use crab meat/some mushrooms)
100g glass noodles
1 1/2cup finely shredded iceberg lettuce
1 small carrot cut into thin strips
12 sprigs of fresh mint
12 sprigs of fresh coriander
12x22 round rice paper (available @cold storage)
1/4 bunch of fresh garlic chives,cut into 12cm lengths

To assemble rolls, place 1sheet of rice paper in a bowl of warm water until soft.
Lift the sheet from water carefully place on board covered with a clean towel.
Fold the rice paper down by 4 cm to create a flat edge.

you may slice the roll into half.

sweet chilli dipping sauce

2fresh red chillies, sliced thinly
3 cloves of garlic,quatered
1/2 cup of white vinegar
1/2cup lightly packed grated palm suger/brown sugar
1/2 tsp salt
1tsp fish sauce
2tsp lime juice

something with cheese..

a colleague shared her cheese tart recipe..
decided to try it out after reading for many times..



mixing cream cheese,sugar,egg..
bake @ 180 degree c for 20mins..

Crust mix: ground macademia nuts,butter,flour
vanilla extract


verdict: too sweet for both cheese & crust, crust too hard..
over estimate d'amt of sugar + teperature not long engh baking.
1st round of crust over baked.

hmmm,will look for another cheese cake recipe.

Crispy Fish

Didnt have the habit of stocking up fridge,
tend to overlook expiry dates..
too lazy to go marketing,decided to whip up something simple..

Happy Anniversary!

3 years anniversary,
this time i attempted making western food (beef)..
decided not to wait for my Le creuset cookware..
try to cook his favourite steak..way to go..

marinade with red wine, garlic & a little worchester sauce,

Always like colours on my plate..
dress it with his fav.zesty italian..
i prefer balsamic vinegar mix :)



Side dishes: runny 3/4done egg, baked potatoes
& baked beans..



verdict: hmm..medium well became medium rare..
worried i over cooked it,picked it up too early,
otherwise pull it thru :)

guess better read up more steak/beef recipe & invest my Le Creuset cookware..
will attempt braise recipe next time..
